A plain language guide to food allergens, the 14 that must be declared by law and what every food business in Ireland has to do about them.
A food allergen is a protein in food that the immune system of an allergic person treats as a threat. Even a tiny amount can trigger a reaction, from hives and swelling to anaphylaxis. Because the reaction is immune driven, the only reliable protection is clear allergen information and careful handling in every kitchen, shop and food business.

A food allergen is a substance, usually a protein in food, that causes an allergic reaction in a sensitive person. The immune system mistakes it for a threat and reacts, sometimes severely.
Fourteen allergens are singled out by EU law because they cause most serious reactions and must always be declared.
No. An allergy involves the immune system and can be life threatening. An intolerance is a digestive problem, uncomfortable but not dangerous in the same way. Food law treats both as information the customer is entitled to.
Yes. Every food business must be able to tell customers which of the 14 allergens are in each food. For food sold loose or served, that information must be available in writing at the point of sale.
Food handlers must be trained and supervised in food hygiene in a way that matches their work, and allergen awareness is a core part of that. Inspectors expect to see evidence of it.
The food allergen awareness course runs beautifully on PC, laptop, tablet and smartphone, wherever in Ireland you happen to be. A clean, comfortable platform designed for smooth learning, between shifts or after close. Every lesson streams on any device, every pause saves your place, and nothing needs installing. HD video and interactive questions make the 14 allergens, cross contact and labelling law genuinely memorable.
The syllabus tracks exactly what Irish EHOs expect: each allergen and its hiding places, reaction and anaphylaxis response, separation and cleaning routines, declaration rules under Regulation 1169/2011 and confident customer communication. Scenes come from real Irish kitchens, delis and counters.
Whether you are a barista fielding your first allergen question or a catering manager certifying a brigade, the allergen training flows without friction from registration to certificate.
A classroom allergen day means lost shifts, travel and cover costs, multiplied by every team member and repeated every 3 years. The online allergen course removes all of it. Staff certify from home or the staff room, starting the moment you enrol them.
Managers see each completion in real time and can show an EHO the complete allergen training record in seconds. Stack the automatic volume discounts on top and this becomes the most economical accredited allergen training available in Ireland.
Pricing is honest: one figure covers the full course, unlimited retakes and the instant allergen awareness certificate. No add ons, ever.
Hospitality rotas leave no room for fixed course dates. The self-paced allergen awareness course lets you move at whatever speed suits, pausing on any device and resuming exactly where you left off, after close, before opening or on the bus home.
A clear progress tracker shows how much of the allergen training remains and how close the certificate is. Most learners finish inside 1-2 hours; others spread it across a few breaks. Both work perfectly.
Assign it to staff and they will slot it around the rota without disrupting service, one of the main reasons Irish food businesses return to Online Safety Courses year after year.
There is no waiting around. Pass the assessment and the digital allergen awareness certificate is generated on the spot, aligned with Irish and EU food law and recognised across Ireland, the UK and Europe.
It lives permanently in your account for re-download during EHO inspections, job applications and insurance renewals, and its unique verification code lets any inspector confirm it instantly.
Paired with a HACCP certificate, it forms the standard food industry double that every Irish kitchen and food shop expects to see.
Every module comes from licensed, Chartered (CMIOSH) consultants who know exactly how allergen incidents happen in real kitchens: the shared fryer, the dusted worktop, the garnish nobody mentioned.
That experience shows: you learn where each of the 14 allergens hides in everyday menus, how one shared spoon can trigger anaphylaxis, the cleaning and separation habits that survive a Friday rush and the exact words to use when a customer asks. Irish kitchen scenarios drive every lesson home.
Content is re-reviewed against current Irish and EU food legislation and national food safety guidance, so the allergen course never drifts out of date.
The platform never closes, which suits an industry that barely does either. Start the allergen training after service, continue before opening and finish on a day off, whatever rhythm the rota allows.
Progress syncs across every device automatically, so switching from phone to laptop mid module is seamless. Split shift and weekend staff get exactly the same premium experience.
Teams can also reopen the 14 allergens module before a menu change or an inspection, turning the allergen course into a living reference rather than a one time event.
Online Safety Courses has certified more than 749,500 learners across Ireland, the UK and Europe, with a 98% pass rate and a 4.9 star average from verified Google reviews we cannot edit or hide.
From Dublin to Cork, Galway to Limerick and Waterford to Belfast, our allergen training helps Irish food businesses serve allergic customers safely and confidently.
Food businesses come back because it simply works: clean records, instant certificates and a support team that answers.
Everyone who prepares, serves or sells food. EU Regulation 1169/2011 makes allergen information mandatory, and the national food safety authority expects trained staff behind every menu declaration and every answer at the counter.
In practice, the people certifying with us are chefs and cooks, kitchen porters, waiters and baristas, deli and counter staff, supermarket workers, food truck operators, market traders and caterers in schools, hospitals and care homes.
Allergen training pairs naturally with HACCP as the food industry standard, and the automatic discounts reward taking both for every team member. Our Irish support team can help you roll it out.
A plain language guide to food allergens, the 14 that must be declared by law and what every food business in Ireland has to do about them.
A food allergy is an immune response. The body produces antibodies against a specific food protein, and the next contact releases histamine and other chemicals that cause the symptoms. Reactions can start within minutes.
A food intolerance does not involve the immune system. Lactose intolerance, for example, is a shortage of the enzyme that digests milk sugar. It is uncomfortable but not life threatening. Coeliac disease is different again: an autoimmune condition triggered by gluten. Food law groups all three together because the customer needs the same thing in each case, accurate information about what is in the food.
EU food law lists 14 substances that must always be declared when they are used as an ingredient or processing aid: cereals containing gluten, crustaceans, eggs, fish, peanuts, soybeans, milk, nuts, celery, mustard, sesame seeds, sulphur dioxide and sulphites above 10 mg per kg or litre, lupin and molluscs. These are the allergens responsible for the great majority of serious reactions in Europe.
The list is not a list of every food that can cause an allergy. Kiwi, for example, causes allergies but is not on the list. The 14 are the substances the law requires you to declare; good practice is to answer honestly about anything else a customer asks about.
Every food business in Ireland, from a cafe to a food manufacturer, has to give customers accurate allergen information. Prepacked food must emphasise the 14 allergens in the ingredients list. Food sold loose or served in restaurants, takeaways, delis and canteens must have the allergen information available in writing at the point where the customer chooses the food, under S.I. No. 489 of 2014. The Food Safety Authority of Ireland enforces these rules through the environmental health service.
Behind the information sits allergen management: knowing exactly what is in every recipe, controlling cross contamination during storage and preparation, and making sure every staff member can answer an allergen question correctly. That is why allergen awareness training is part of the hygiene training food handlers must receive under Regulation (EC) No 852/2004.
An allergen triggers the immune system. The reaction can be severe and the amount that causes it can be tiny.
Fourteen allergens must be declared in every EU country, on labels and for food sold loose.
In Ireland, restaurants and takeaways must have written allergen information available at the point of sale.
Understanding allergens is the first step. The Food Allergen Awareness Course on this page turns that understanding into a certificate your customers and inspectors recognise, fully online, in about an hour.
